Brewing with wild yeast in honey? - brewing ginger beer

I am interested in testing a ginger wine (Class A) Beer test using spontaneous fermentation with wild yeast present in honey, and I want to know if this is doomed to failure, and where serious health Hazzard involved.

Here is my plan,

Ginger Boil 1) a large quantity of ginger tea.
2) Use the ginger tea, rice cooking - tea vs rice in bulk.
3) deformation of the grain and let the soup cool to moderately warm temperatures.
4) In natural / organic raw honey soup, rice, ginger and sugar, or more.
To ventilate 5) Pour into a bottle and shake.
6) Add to a blockage of the air in the bottle to rest in a warm place for a long time.

I read that some honeys strong the yeast, which we see a few bubbles containing killed at the edges. They are activated, if the honey is diluted.

I hope there is enough of Saccharomyces cerevisiae in the mixture thoroughly mixed.
